This is one of three copper pot stills installed at @woodfordreserve distillery. The pot stills have a commanding presence and were hand crafted by Forsyths in Scotland.
On the back wall you can see the spirits safe, also called a tail box. These boxes were used to allow the distillers to sample the proof coming off of the still and make cuts as needed. Often you will also see a hydrometer inside these boxes to assist with the process. At one point in time the spirits safe was under lock & key by the local excise man to determine the amount of tax to be charged for the spirits.
