It’s fRYEday and we couldn’t be more excited about this new release from Jefferson’s.
Trey Zoeller and the team at Jefferson’s have been busy and they are proudly introducing Jefferson’s Rye Cognac Cask Finish. Set to debut this March, this marks only the second rye in the brand’s history, the first of which was released over 13 years ago, back in 2008. Where does the time go!?
Jefferson’s Rye Cognac Cask Finish is a double-barreled straight rye whiskey that has come to full maturation prior to finishing in Cognac casks. We are told that the aged rye whiskey rests for an additional nine to nineteen months before bottling in Kentucky.
Jefferson’s Bourbon Founder Trey Zoeller worked with Cognac casks to bevel the rye’s edges, round out the flavor profile and add dimension, the company says. This imparted complexities intrinsic to Cognac while maintaining a rye backbone, resulting in a spirit with spice up front, notes of orange, peach and honey.
“I wanted to look at rye through a new lens and elevate it past the supporting role it’s commonly associated with,” says Zoeller. “The spirit’s spice and character have historically made it an ideal base for cocktails, but Jefferson’s Rye Cognac Cask Finish is just as well suited for sipping.”
We were very excited last week when we saw this tweet from Jefferson’s giving us a sneak peek. Now that we know more, we simply cannot wait to try this one for ourselves.
From the very beginning, Jefferson’s has taken a different approach to whiskey making, focusing on innovation in the maturation process. At the end of March, we are releasing a new cask. Stay tuned for our newest finishing technique. pic.twitter.com/5GzmITQKUS
